Made from the jowls of the pig, Guanciale is a bacon-like Italian air dried meat. Cured in sea salt and seasoned with black pepper, coriander, rosemary and bay leaves, guanciale is traditionally used in pasta sauces such as amatriciana and carbonara. Use Guanciale as a substitute to bacon or Pancetta.
