A delicacy originating from the Valtellina region in Italy, Bresaola is an air-dried and cured beef delicacy coming from the top-round cut of the cow. Aged for 2-3 months, this lean and tender item is a delicious ingredient to sandwiches or antipasti. It is most traditionally eaten in an arugula salad, seasoned with olive oil, lemon juice, salt and pepper.
