Zamorano is a name protected (DO), sheep's milk cheese from the Castile region in Spain. Made using unpasteurized milk sourced from the Churra and Castellana sheep, this cheese aged for at least 6 months, but typically longer. Manufactured in a similar style as Manchego, Zamorano has a flavor that is both nuttier and sharper than its cousin.
