The most popular washed rind cheeses from Italy, Taleggio is made using pasteurized cow milk from the Lombardy region. Named after the Val Taleggio, an Alpine valley in between the provinces of Bergamo and Lecco, this cheese has a rich and beefy flavor a brownish red colored rind that is slightly sticky in texture. One of the oldest cheeses in Italy, this is a beautiful addition to your Italian samplers and dinner parties.
