This is not the cheese that most people think of when they think of Munster. This is the traditional, name controlled cheese from Northeastern France. Made using pasteurized cow milk, this cheese carries two names. In Alsace, this cheese is referred to as Munster. In Lorraine, on the other side of the Vosges Mountains, it is known as Gerome. This cheese is a rich and aromatic cheese with a powerful flavor and a sticky, orange colored rind. It is grassy and herbaceous in flavor using milk sourced from the Vosgiennes breed of cow. Aged for about 2-3 months, it is a rich and powerful cheese.
