Monte Veronese is an Italian name controlled cow's milk cheese. Produced in the Lessini mountainous area above Verona, this is a semi-firm cylindrical shaped cheese that is aged for at least 2 months. Made from unpasteurized milk that is partially skimmed, the cheese becomes ivory colored and dense with a rich and nutty flavor that can be used as both a table and grating cheese.
