Crema di Roma is a pure sheep milk cheese made from pasteurized milk sourced in the Lazio region of Italy. Literally translated as the "cream of Rome" for its light texture and sweet flavor, this cheese was given this name by Guiseppe Lopez, one of the finest producers of Pecorino Romano. It is lighter and softer on the palate than most pecorinos, making it a perfect table cheese. This version has a scattering of hot chili flakes to give it an extra kick.
