Appenzeller is cow milk cheese made in the Appenzel region of Eastern Switzerland. Aged for 4 mounts using unpasteurized milk, the forms are washed in a mixture of wine, spices and salt. This cheese has a rich, nutty, and tangy flavor. Appenzeller is one of the three cheeses, along with Gruyere and Emmental, that is traditionally used in authentic Swiss Fondue.
