Mahon is a name controlled, cow milk cheese from the Mpanish island of Minorca. Aged for at least two months, this version of Mahon is semi-soft in texture with an ivory colored pate and a mildly nutty flavor. One of the few cow milk Spanish cheeses, it is most recognized by its square shape with rounded edges.
