Gruyere is one of Switzerland's most popular cheeses. Made from unpasteurized cow’s milk, this cheese originated in the town of Gruyere. The flavor is complex, rich, sweet, and nutty with a lingering but not sharp flavor. Along with Appenzeller and Emmental, Gruyere is one of the three traditional ingredients in making Fondue.
