Alta Badia is a nuttier cow cheese from the Dolomite Mountains in Northern Italy, made with unpasteurized cow milk and aged for 3 months. Named after the small town in the Alps, it has developed a rich ivory colored pate and semi-firm texture. Alta Badia resembles many mountain Swiss cheeses in flavor and texture such as Gruyere and Appenzeller.
