Tete de Moine is a semi-hard cows milk Swiss mountain cheese produced in a cylindrical shape about the size of a coffee can. Historically produced by Monks from Bellelay, Tete de Moine literally means “Monks Head” and is sometimes eaten using a Girolle, a knife that would create small shavings of the cheese. Robust and beefy in flavor, it is one of our strongest Swiss cheeses. Tete de Moine is made using unpasteurized milk.
