St. Nectaire is a name registered, cows milk cheese using pasteurized milk sourced from Salers breed of cattle in the Auvergne region of France. A Saint Nectaire never existed, as this cheese in fact derived from the Marechal of Sennecterre who served this cheese at the table of Louis XIV. Earthy in flavor and musty in aroma, partly because this cheese is aged on top of rye straw, this cheese develops a creamy texture with a nutty flavor.
