St. Maure is a slightly aged goat cheese with a blooming rind. It most closely resembles a miniature version of Bucheron. Its pate is soft and spreadable, but not creamy, and has a nutty and tangy flavor. It is a cheese that will easily melt in your mouth and pairs beautifully with crackers and dried fruit.
