Produced in the Franche-Comte region in France, Roucoulons is a soft ripened, cow’s milk cheese. Made using pasteurized milk and formed into small cylindrical wheels, it has a pale, orange colored rind with a flavor that is rustic and beefy. It is creamy in texture and with a lovely depth of flavor. Enjoy with a light pinot noir.
