Ossou-Iraty is a name controlled sheep milk cheese from the Pyrenees Mountains in France. The milk is sourced from two regions within the mountain range. Ossou is in Bearn and Iraty is in the French Basque region. Its pate is beige colored and somewhat firm with a dense full flavor that is sweet and nutty. This is a cheese for any Manchego lover!
