Beaufort is an AOC cheese from the Savoie region in France. It is a semi-firm, full-flavored mountain cheese that is often compared to Gruyere and Comte. Made from unpasteurized cow milk, it has a yellowish brown rind, creamy yet firm texture with a nutty flavor and a grassy aroma. This is truly one of our favorite cheeses. Perfect to liven up cheese platters, in sandwiches, or as a substitute for Fondue.
