Made in the Champagne region in France, Chaource is an AOC cow’s milk cheese. Made from pasteurized milk, it is manufactured to form small cylindrical wheels that are dense and creamy. A double crème cheese, its flavor is buttery and milky with hints of mushroom and herbs. Chaource is excellent with sparkling wines such as Champagne but also pairs beautifully with dry white wines such as Sancerre and Chablis.
